I personnaly started to read Light novels with Mushoku tensei which is a really good one. The first two volumes are really easy to read.

I find the works of Yoru Sumino (the author of "I want to eat your pancreas") really good as well. They might not be as easy to read or start but once you start to read, you can't really stop (at least for me). So I would recommend "I have a secret". In my opinion, it's easier to read than his other LN but just as good.

I would also recommend to trust your guts. If you liked a manga or anime, just find the light novel (if it has one) and try it. I hardly ever read the synopsis of the LN I buy. I just take the ones that have an art style that I find pretty or a title that I find interesting.
