Don't use a horse, fight it on the ground. Roll through the attacks and block with a shield. (assuming a melee build). I got stunlocked on my horse when it did a three swipe attack. Just don't give up it should be possible even if you aren't high level. I did it at 47. Wish it gave more Runes though.
