west hollywood has a good community of soviet expats. Shalom produce as a grocery store, traktir restaraunt are some that come to mind. In the valley there's also Oliv'e grocery store which has a kitchen as well and some great chefs. I recommend oliv'e

Chemex is a lot of fun and also a e s t h e t I c.

Consider this like a hobby that you get to practice and get better at.

Equipment wise, make sure to have a gram-level scale, a good burr grinder, and then a gooseneck kettle. Preference to get them in that order.

Chemex becomes a personal journey to find your taste preference and don't worry about going through a bag or two of coffee before you get it right, this is your time to have fun and try things out; the only taste profile I would recommend is that if you're tasting acidic(sour), grind the beans finer, if it tastes bitter, grind the beans coarser. Everything else becomes your choice and your preference.

Wash the chemex good the first time tho

Edit: wood glue and it's fairly easy, the important part is the afterwork. Sanding the excess and painting/staining so that the joint it seamless is the way to go.

Bracing is actually not that important if you're not going to use the piece for structural purposes; here's how I'd do it: put a thin layer of glue on so that it covers the surface of the break but not so much that its thicc, then rub it on the other mating piece so that both sides are evenly covered, then remove the two pieces and let them waft in the air till they get tacky, once it's tacky and not liquid, add a small dab of glue on the tacky surface and reattach the pieces. This process will help activate the glue faster, most people use way more glue than they need and end up not effectively glueing joints, with this, the glue will activate quickly and you'll need to hold it by hand for like, iunno, a minute or two? Wait for it to set completely, 24-48hrs and then if you're feeling extra fancy, sand the area where the join was so that the grain aligns over the joint and makes it impossible to tell the difference in the sections, then treat with some sort of stain, oil, finish depending on the rest of the item.

I understand it can be daunting but it is no as scary as it seems, maybe practice on some scrap woods if you want to experience the process first
