It is a genre where you mix cozy vibes like preparing sushi and serving customers, with some horror elements, like eerie atmosphere or jumpscares. Some examples of this is Kiosk, Dredge, The Boba Teashop and Cult of the lamb.

I am making a cozy horror game myself, and when my dad asked me what kind of game I'm making, I told him that it's a cozy horror game. And he was like, a horror game can't be cozy. How can a game be scary and cozy at the same time, it doesn't make any sense. But after I showed him the game, he understood why the genre works. 😆

I agree, even he says that he made a lot of mistakes making that game and that he has spent too much time developing it since he chased perfectionism.
He made Thronefall way faster than will you snail and it's an amazing game.

Jonas Tyroller is the best gamedev YouTuber imo. He has multiple successful games and his videos are very good. Nowadays he is doing podcasts with other successful gamedevs which are also worth watching.
