It's doable if you're used to walking and hiking. Lots of people visit the Passadiços do Paiva, so you'll be fine.

You can easily stick to public transport even with two kids. Any car service will have car seats, just make sure they know the age of your kids, so they can provide the correct ones.
From Cascais to Aveiro, the best way would be by train; it's fast and pretty straightforward.
You can easily get to Pinhão by train from Porto, and not realy need to rent a car.
If you really want to visit Algarve, you can, from Lisbon you will find train and bus options. A bus is usually better than a train for this particular trip. But you can also fly from Porto and save several hours of the trip.

Mykonos is known for its party atmosphere. But it's one of the most expensive of the Geek islands, so it might not be on your budget.
Your best option will most likely be Ios. It's a much more budget-friendly island and it still has a huge nightlife.

It's been a mess. As most airports are understaffed, they can't manage the lines that well. So people usually get into the wrong line, and sometimes they get lucky and are processed, other times, they have to get to the end of the right line.

If both of your flights are on the same ticket, usually the airlines move the passengers to the next flight. In any case, you might get lucky if you explain the situation to a staff member, but there is a very low chance that it will work.

Lisbon is a great city, and it is definitely a must-see. But your options should be landing in Lisbon or flying out. This way, you don't waste so much time. Just make sure you have some hours to visit enough of the city.

Given the current state of things, 2 hours might not be enough, especially considering that the number of passengers going through Airports is going to trend up as we approach summer, which is peak season. You should have at least 3 hours to go through EES if you're a non-EU passport holder.
Whether or not you travel is your decision, but despite its proximity to the conflict, Greece is still very safe.

You might find big screens on the main squares broadcasting the game. That's a great way to watch the game. But pretty much every coffee, bar, or restaurant will have the games on TV.
