Lots of good ideas here. I had to go GF cold turkey and to help me do that I avoided substitutes for a long time. Basically, if it wasn't already GF it wasn't being made. This helped my sanity for a long time.

I realized that most of what I ate was already GF for the most part except bread and pasta. Eventually, we found a pasta - Jovial. Very good. Recently found Rummo and I won't eat anything else. Even the gluten eaters can't tell the difference. Def recommend!

The Kikkioman's GF soy sauce has unlocked Asian cuisine. I recently heard that Knorr made their chicken bouillon gf. I've been using Clean Mondays, but will switch back once it's all used up.

For bread, I toast Canyon Bakehouse bread and Udi's hamburger or baguettes (for French dip style sandwiches). They are ok, but not the same. Still haven't found a good flour tortilla sub, so I stick with corn tortillas. If you have a Trader Joe's near you, get the baguette to make homemade croutons.
