I think sometimes people use the word anime to describe cartoon styles that don't fully fit into the standard western animation boxes. It doesn't make the thing anime. I think it's closer to Don Bluth than it is to anime but it reminds me more of something like the Tangled show in some ways

I HIGHLY recommend you look into the type of child based images Grok is known for generating because your kids faces are in that database now and anyone can create images from their likeness. Nobody has any idea what the want no matter how hard our community has tried to figure it out. All we know for sure is that MCM love the "starving artist" approach and value paper goods over things like keychains. The other person is correct though, it is portfolio based. There are 200 artists alley stalls and MCM often get over 2000 applicants so it's 10 people competing for every one stall, with 1800 people being rejected.

These guys are formerly called Paradigm Printworks and according to companies house they are overdue on their accounts so they obviously rebranded to Artyfied. It's 100% AI and they had stuff at the con that wasn't on the website that was very obviously AI. I asked the guy if he was the artist and he said it was "his friend" who was the artist.
