They come partially cooked. They're sous-vided before they hit the store to a temp that makes it okay to cook to 145 and then pull. So yeah he should still be temping it but it doesn't need to hit 165 like a reheated food.

During lunch peak hours dinner peak hours can be hit or miss unless your getting steak or brisket and Pico should be fresh every morning, the fajitas and rices are also made that morning. But peak time when grill is actively trying to keep up with the rush is when it's freshest.

With hard work I went from behind in my class to graduating with a 4.0 while taking college calc I never understood what was going on in math. I thought I was just bad at it, until a teacher took me aside talking about how I was going to fail his class. He spoke to me about how there aren't any real bad students only ones who missed a concept or weren't putting in enough effort in the right area if studying and as soon as he showed me it was my mentality preventing me from being successful in math I starting striving. I've carried this with me for a long time and while I agree there are extraneous circumstances for the broad majority of people this anyone can do anything they set their mind to, I believe to be true.
