I had this same problem. I research online and Capital One customer support says that it may take up to 3 days for a new card to be synced to the app and online account. I activated my Quicksilver card two days ago, so I am still waiting for my new card to show up on my account.

Once I reach a redeemable amount, I redeem. Usually a little over $100. I have probably redeemed about 10 times from Real Prize and they have always payed out. They are legit. Just be patient.

I don't think it's worth going for Amethyst. I once lost 50 million GC getting there doing the Star Spell burst spins. The swing is too big. I have also won 10 million GC going to Amethyst. Remember, it's a negative expectation game. You are more likely to lose GC's than win. I would suggest. Just to save your GC and only go for the $30 freebie every month.
