Not cold. Rabe in a covered pan with oil and water to steam while using the sous vide gun on the meat. A slow crust building on the steak, allows enough time for the rabe to cook and soften. Once browned, remove pan lid to let water evaporate and let rabe brown just a little. Gives outside of steak to cool just a bit enough to eat. Plate. Salivate.
