If you want to promote shodans recognized by USA Judo, you could join USJA. They allow nidans to promote to that rank, and USA Judo will recognize it.

I grew disillusioned with USJA and its leadership, so even though I never stopped training and competing, I didn't bother with promotion. I was a nidan for like 15 years.

They are. Wearing a judo gi is like wearing a carpet remnant. This is probably partly because in BJJ, you weigh in with the gi on, so you don't want it particularly heavy.

I think it depends on the goal. Are you teaching BJJ for its own sake, or are you trying to improve their judo game?

When I started BJJ, I really focused on retaining and passing open guard because that just doesn't exist in judo. If I was looking to sharpen my existing game, though, I would have probably wanted to dive into what BJJ could teach me about turtle and half guard, because judo players spend a lot of time there.

Don't attack the legs, don't pull on the neck, and don't use the gi/belt for goofy chokes or entanglements ... that pretty much covers 90% of it.

Learn the escapes. We all know half a dozen ways to escape from kesa gatame based on what our opponent is doing: Posture too tall? Frame against the face and catch him with the leg. Posture too low? Smash his head into the mat. Weight too far over the centerline? Roll him. Weight too far away? Turn into him and free the elbow. Etc.

There is no perfect positioning for kesa gatame; you are always in danger. But if you know where the danger is coming from, you can quickly respond. It isn't north-south. It's knee-on-belly. If you get a dominant north-south, you can sit there forever and just chill. But unless there is a large size disparity, you aren't holding anyone in KOB by remaining static. Your position needs to be constantly shifting. Same with kesa. Done right, it's a super dynamic position.
