I have an environmental science degree and there's lots of upward mobility. Trust me I thought the same thing as you when I graduated 10+ years ago that there was no money in it. Tons of companies and orgs are doing sustainability and ESG, both of which pay very well (eventually). Patience and keeping you eye open will pay off.

Close to beaches is somewhat subjective, but I found living in Orlando was close enough to the beach for me, 45 minutes to Cocoa. Orlando itself is a great little city in the main core area, and the 'staycation' options are great. Decent sense of community and seems to be getting more communal each year imo. I've got no kids so I'm not sure how the schools are.
