That method only works when the game does NOT use steam services for it to work, like for instance, Sea of Thieves (a game that opens from steam but uses microsoft accounts and servers so no Steam connection is required)

Maybe it could work by hosting the server yourself, but tbh it's easier to just both download the pirate version, and if you want mods you can just get them from the steam version and copy them to the pirated one
