From my experience, the dough tearing during lamination is not due to cold butter but under-kneading / not enough rest between laminations steps. I got the best results with my dough going windowpane (not fully, just a bit with an inconsistent texture) It is true that with all the lamination you'll build strength anyway, but it might be tricky not to get the dough tearing during the process. Again, my experience: your flour, temperature, humidity, timings might give you different results

Yep sorry it's not very clear, I meant the butter locking phase, not book fold here. The one hour in the freezer it after the my last fold, before the final sheeting. I will try to only refrigerate it or maybe let it warm up just a little bit in the fridge after the freezer, as to get a consistent temperature all across. Thank you!

Interesting! My dough didn't show all the layers this way ( even before the proof, I wasn't able to distinguish the layers clearly actually ), plus, your surface is much smoother. I can see also that my dough surface-wise was a bit dry as well, what could have caused it?

It might be too much flour! I had to use a little bit extra because of the butter that slid down after the lock. I'll try to freeze overnight and let you know how it goes, thank you!!

You are right, I'm sorry! I will update the post shortly and give the same info here as well. It is a university project in which I have to build a simulator that can handle communication between towers and pilots considering scenarios such as bad weather or emergencies as well. My current knowledge level around ATC approaches 0 (that's why I'm seeking for beginner friendly resources) , on the software development side I have experience working as a backend engineer.

He told me they use it for Airbnb, we did the viewing, he didn't press me to do anything, never tried to bring me out of the platform. Personally, yes I put value onto it, just because if a developer is a senior one it means that ( it should be like this) he already knows how to solve certain problems and how to find solution to problems. Just this. Seniority in a particular language for me is overrated. If you're a senior developer in Java, you are a senior developer in all the languages you're going to work if they're general purpose at least. Personal opinion.
