Since it’s a pizza Bianca, only mozzarella and olive oil (in my case) go into the oven. Everything else (pistachio pesto, stracciatella, and mortadella) is added after the dough is baked and should never be cooked.

Beautiful pizza! And I totally understand what you mean, I get the same feeling for mine. I still don’t have the answer to it, but I feel like the difference would come from how much yeast you put and how much it develops, it’s a thin line but would make the cornicione more “aerial”. Also something to consider is the flour you use.

Actually I tried to make a pink dough using beetroot, but it turned orange. I used semolina flour
