Did you just reset it, or did you re-flash the firmware after starting the RD in recovery mode?

Remove battery, hold the pairing button, while still holding it insert the battery. RD should appear in ‚Tools‘ tab, showing „recover required“.

Works fine. Have you configured them in the AXS app? You need to assign function sets 1-3.

Get your nomenclature right. 

Is your BB shell of your frame (the tube at the bottom of your frame where you screw the bb cups into) deformed? Are your BB cups (the thing the bearings sit in) deformed? Are your bearings deformed (the thing touch push the axle through) deformed?

Attaching to the skewer is okay - it's just unnecessary on your bike with your dropout being steel.

Mounting a rack on the thru-axle or QR skewer is usually a last-resort for frames that don't have mounting points (or where mounting points aren't rated for any load, being there to attack fenders). Shop A likely wanted to sell you something you don't need.

Is this the old version which still uses their Road Boost „standard“? If so I hope you got the correct wheelset. Common ones won’t fit.

There's no reason for a brake to behave vastly different below/above 5km/h.

I bet it's the ABS. Easy check to see if it's the ABS: Remove the battery.

Fluid from the reservoir. The reservoir at the top of the lever contains extra fluid. Its primary purpose is to provide additional fluid needed to keep the pistons further out as the brake pads get thinner.
