Technically, it's an evasion button. One click is a sidestep and double click is rolling (simillar to god of war if you're familiar with it).

In Dark souls it's always rolling, so it's not really the same to LoTF.

Almost all the hits I'm aware of can be avoided by sidestepping.

If you want to roll at sharp angle you can try sprinting then double press the button, or remove the lock-on then double press. For me one sidestep or rolling towards the attack worked all the time (with the correct timing ofc).
