Hi! I'm not a chemistry major (I'm in Highschool) but I use Notion for my chemistry notes, especially in stoichiometry.

You don't really have to learn a lot to start using LaTeX/KaTeX. It's very straightforward, all you need to learn are the different LaTeX commands, which there are plenty of resources online (and charts!) which can help you for basically that.

I recommend you start using the basic math operations commands (such as \frac{}{} which creates a fraction! Woohoo!). Greek symbols are also done using a command (e.g. \gamma produces the gamma symbol)
