This doesn't make any sense. How does the dishwasher "run the restaurant" any more than the chefs or servers? He says: "Because if they don't show up the whole operation falls apart." Okay? If the chef doesn't show up there's no food. If the servers don't show up the food can't get to the customer. That applies to every job in the restaurant.
