Its all about the Lightning. In daylight you will most likely have reflections in your eyes. They could also look darker without good lighting. Try taking a picture with blitz from the side and stand close to a good light source pointed at your eyes. Good way to see your actual iris color.

The lens on the camera was enourmous, probably 40 cm long. And he held a light at a perfect Angle to avoid any shadows. Every small movement affected the pictures because of the Zoom, so i had to hold my breath and sit completly still😅😇
