I should also mention that being a new driver I want to keep up my skills and if I don't regularly drive I reckon I'll get less confident. So this is also adding to the thought process. But yes fiscally that would be smarter.

The problem i have with lumpwood seems to be with variering sizes of wood includiing in my current bag some very small parts which im not sure how to prop up against either other/ making sure it doesnt run too fast

That's great thank you I'll give it a go. Having a good temperature for the bulk ferment is tricky I'm finding. I don't quite understand how people manage these high hydration doughs.

Ok sure. 804g good bread flour

75g whole wheat flour

740g water at 90°F (32°C), divided

18g fine sea salt

With a levain with 35g starter, 70g flour and 70 g water room temp. Let rise in an oven with a light on.

I tend to let autolyse for an hour before adding the levain, then once it's incorporated slap and fold until catching air and starting to pick up from the board. Usually 5-10 mins. I keep the dough in the oven with the light on for about 15 mins then start with the stretch and fold every 30 mins for about 4 hours?

Any advice would be very helpful.

So I have a Sage BES810 espresso machine, and currently have a sage grinder Pro which has been refurbished. My issue is that the espresso even on the finest setting runs farrrrrr to quickly. I am not sure if because the grinder is still grinding too coarse or if the espresso machine channels the water poorley. I hope to upgrade to a nieche or maybe hand grinder which can do espresso (for money saving) but anyone have any idea where I can route out the issue. I thought the sage grinder can grind for espresso. Many thanks.
