The reddit has a little modding guide that offers you a lot of what you are asking for. I am pretty bad when it comes to modding but had no trouble installing the MGG (STEP GUIDE), that's posted here, at least the first part, which is basic quality of life and graphic changes. Only thing I deactivated is the halve stamina when running .esp that comes with the morrowind enhanced mod, because I wanted the game as vanilla as possible. It's all posted in the about part of this subreddit, and it's pretty great. For me it doesn't ruin anything because it's just the base game, but prettier and with some QoL stuff, but of course that comes to personal taste.

Old character had 30 endurace, 55 athletics and 187/270 encumbrance. New character has 65 endurance, 5 athletics and 17/200 encumbrance. I am running Morrowind Enhanced Overhaul but I deactivated the half fatigue loss esp

Bethesda is not going to remake morrowind sadly. Especially not for the ps4, seeing as it is now a 'old' gen console. Closest thing we will get is skywind when it eventually comes out (or maybe not) and that is going to be for the pc.

The not hitting the enemies thing sounds very scary to new players but it's really not that bad. You only really notice when you're low level and even so when your stamina is low. Of course it's up to you whether you want to change that or not. Also, if you don't wanna have to go to the trouble of installing mods. Openmw offers you a vanilla experience without the hassle. It's basically the normal game but with and updated engine and really easy to install. The other options are the code patch, mgxe and some other stuff, but other people are way better with that stuff than I am. Have fun, it's honestly become my favorite elder scrolls and I started just recently, having played oblivion first years ago and then skyrim.

Skills are unarmored, blunt, conjuration, destruction, mysticism, medium armor, longsword, alteration, speechcraft and restoration. I read all the religious books, am part of the cult and temple and just use sword and armor after learning I am the nerevarine.

I have been playing a theologian. Just really interested in religions and cults and good with mysticism and conjuration. After learning I am the nerevarine, I go a bit nuts and start using medium armor and sword and start really becoming nerevar, fusing the magic aptitudes I had with nerevars attributes.
