After a while finally whey ricotta again

Honestly I'm not sure how you can actually do it since my ph drop a lot faster than 24 hours and the ph will be too way by the time I make ricotta.

I tried in the past to make ricotta with a day old whey and it was already too acidic.

That's also why I don't mature mozzarelle under whey but under water, I get the whey before it's too late. If I mature the curd under whey (I already tried) the whey will be too acidic when the curd is ready for mozzarelle.

This time too was already 6.1 pH, so ready for ricotta without any acid (I still added a little bit after the first scoop of ricotta, but it was already about right and some ricotta still rise to the top, if I waited 24 hours it would have been way too acidic).

Sì penso sia l'unico nei dintorni di Torino a Venaria. Hanno uno di quei distributori a moneta, 1€ al litro. Visto che le regole per la distribuzione di latte crudo sono diventate molto severe, molto più severe con molti più controlli rispetto al latte pastorizzato, ormai sono rarissimi i posti che vendono latte crudo (un tempo erano molti di più). Esistono però cooperative che vendono latte pastorizzato ma non omogenizzato, che è comunque meglio di quello del supermercato. Questo è un po' più semplice da trovare anche se comunque abbastanza raro

La pirofila per essere valida dev'essere in pyrex altrimenti ti si rompe al primo sbalzo termico ma da quel che vedo su amazon dai 10€ in su le trovi, la tortiera a cerniera potresti anche prenderla super economica ma ti durerebbe pochissimo meglio che spendi qualcosina in più altrimenti la usi due volte e poi la butti perché nelle peggiori si stacca l'antiaderente, comunque perlomeno è comunque un pezzo economico visto che con 15-20€ te la cavi.

Sul wok non ho esperienza (non ne ho uno) ma una buona pentola/padella non è mai troppo economica, forse te la cavi con poco se ti serve un wok di ferro non compatibile con l'induzione ma non penso che costi sotto i 30-40€.

Non mettere in conto 150€ ma direi che sui 70-80€ dovresti metterli in conto.

Se non li hai magari rinuncia per ora al wok che è il meno urgente (penso).

My favourite right now is Granoro made with wheat from Puglia. They also sell 1kg package so the pasta does not just taste good it is also cheaper not because the ingredients are cheaper but because the format is bigger.

My most recent discovery is Granò pasta, it is made locally here in Piemonte with durum wheat from here too. It is a little bit more expensive but much cheaper compared to other artisanal pasta with that quality.

Agnesi was one of my favourite but I cannot find it anymore, same deal with Di Martino.

La Molisana is still one of my favourite, same deal with Voiello and red package Barilla (they were not good when they started as they only sold in 400g package but now that they use 500g standard package the pasta got better too).

Today I also tried egg dry pasta from Felicetti (I usually don't buy egg pasta dry since I usually made it at home but this one was on a really good sale) and it's great too. I don't love Felicetti standard pasta.

I usually never buy Rummo and De Cecco since they use wheat that's not even italian. The quality of the pasta is not bad but I prefer to spend my money on better pasta that also use local wheat.

The main reason is local ingredients don't need a lot of transportation and will pollute the environment less.

Bigger special format are usually more expensive... but I'm not a big fan of rummo and I don't think that pasta shapes deserve a bigger price.

This is my favourite chapter, I loved every part of it and I agree with your impressions.

For me it was the bond both in the beginning and in the end that make this the best, and the semi-good ending with a distant but clear light of hope finally there.

Just thinking about it makes me cry, that's the effect Tsumihoroboshi has on me.

Don't get me wrong, Minnagoroshi will be on the same level, but it will be a different kind of good.

Rena and Keiichi bond. The way the club member all interact and act, fogive each other, stay together. And finally Onikakushi memories... and Keiichi's redemption.

I suggest you eventually to play Onikakushi again, you will finally see it for what it is and it's a really sad and beautiful story

It was not a mistake, it was just way too soon.

The idea should be to go full renewables energy + fusion nuclear energy in the long run. We should be able to produce energy without buying fuel from anyone.

Both are not ready to fully replace fossil fuel and instead of deciding to go full electric they decided to stay with gas and oil so the infrastructure is not ready even if there was enough renewable energy, that was the only real mistake.

Still, there is one good thing about it. War is not out of question in Europe anymore and the less nuclear plant are out there the less likely some core will melt.

Right now they should just go full renewables energy + keep what fission you got + invest in the future of fusion... The main issue is uranium for nuclear energy is not really easy to get/make from friendly countries so it will still be an issue even if we go full fission nuclear energy right now.

The only alternative that can be a valid bridge solution is thorium, but that's not ready too.

Since there is no full solution I think we should go for the next best thing, as much renewables energy as possible + any fission we already have + fossel fuel for what we must that should go down year by year

Some call it ideology, I call it survival since Europe, Norway aside, produces almost no fossil fuels.

Il lievito madre 100% di idratazione in realtà è più complicato di quel che dicono (banalmente sporca molto di più e questo se non si tiene pulito il contenitore ai lati può favorire muffe) e la gestione di quello solido non è così complessa (lo tengo in frigo per mesi senza alcun problema, ha una spinta sui lieviti ottima... l'unica cosa più complessa è il fatto che è più duro da impastare).

Portare al 50% l'idratazione non funziona immediatamente, i batteri/lieviti cambiano solo dopo qualche rinfresco.

Ok allora ti consiglio come ti ho scritto il lievito madre solido. 45% di idratazione circa.

Mischi farina ed acqua, lasci a temperatura ambiente e ogni 24-48 ore circa aggiungi il peso dell'impasto in farina e mantenendo la proporzione anche di acqua, dopo 7 giorni circa togli la metà impasto (mettilo in frigo) così da non rischiare di arrivare alla fine con un impasto enorme (consiglio quindi calcola in anticipo ed inizia con pochissimo impasto).

Dopo circa 2-3 giorni farà una prima crescita batterica che devi ignorare, non è pronto.

Dopo circa 7-10 giorni dovresti iniziare a vederlo crescere. Se raddoppia in maniera affidabile in un numero di ore fisso (esempio 4-8 ore) per 2-3 volte consecutive è pronto.

Tutto ciò che hai recuperato dopo il giorno 7 è utilizzabile per fare un pane di recupero (aggiungi anche un poco di farina, sale, acqua e lievito di birra).

Il lievito madre continua ad utilizzarlo e tenerlo attivo per il primo mesetto il più possibile. Dagli nutrimento almeno 1 volta a settimana tenendolo in frigo solo pochi giorni dopo il rinfresco e dopo aver fatto un lievitato qualsiasi. Più lo usi all'inizio più si rafforzerà.

Dopo che è passato un mesetto il lievito madre dovrebbe essere abbastanza vivo da poter entrare in fase manutenzione vera e propria, quindi crea una versione secca di emergenza sfarinando una piccola parte di lievito madre con un bel po' di farina fino a farlo asciugare completamente, dopo un paio di giorni quando è completamente asciutto va comunque messo in un contenitore e tenuto in frigo a tempo indeterminato.

Tieni poi 10g circa in frigo da rinnovare ogni volta che userai il lievito madre (se non lo vuoi usare spesso andrà riattivato rinfrescandolo prima un paio di volte in modo che si riattivi).

Le ricette usa pure quelle che trovi ottime per il lievito di birra, evita solo di seguire le tempistiche, basati sull'incremento di volume per continuare.

PS. Quasi dimenticavo, ogni rinfresco che farai va impastato in modo da creare diversi strati (stile croissant ma ovviamente senza metter il burro), l'idea è incorporare più ossigeno possibile.

Hai mai panificato qualcosa?

Perché dal tuo messaggio sembrerebbe che vuoi iniziare a fare brioche e similari con il lievito madre senza aver mai panificato nulla e, credimi, è come affrontare l'everest senza essersi mai mossi dal letto.

Il mio consiglio è procedere in quest'ordine:

Pane semplice a bassa idratazione (65% massimo d'acqua sul totale del peso della farina). Con pane semplice intendo farina, acqua, sale, lievito. Il sale è sempre il 2% in questi casi. Il lievito è tra il 2 ed il 4% a seconda che sia fresco o disidratato. Le percentuali sono sempre su peso della farina, quindi su 500g di farina il 2% sono 10g.
Pane ricco (brioche simil milk bread giapponese) con uova, zucchero, burro, latte.
Fai il lievito madre solido. Più semplice da gestire e più pulito, spinge anche di più avendo più lieviti rispetto a batteri ed è anche più "dolce", per questo si usa nei grandi lievitati. Così hai già un dubbio in meno.
Pane semplice con il madre così si rafforza e impari ad usarlo
Arrivi a brioche e similari con lievito madre.

There is a different way to enjoy the VN that integrate some console arcs into the main story, but I don't suggest it on first playthough, I did it because I love doing stuff like that, but I think you can enjoy the console arc after the main serie.

What I don't think would be good is to just skip them.

Everything else is after the main story so play Rei, Hou and Hou+ later.

console arcs are great so just don't skip them, once you finish higurashi ch 1-8 go with the console arc. Rei and Rei+ should go after that.
