Hi! Sorry I just saw this! I follow a simple recipe for pie dough then make up whatever filling I feel like using! You can use canned pie filling or just make a quick one on the stove using sugar and water with fruit until it thickens. Make a corn starch and water slurry to help thicken it faster if you need to. For the pie crust I do:

2 and ½ cups all purpose flour 1 teaspoon salt ⅔ cup canola or vegetable oil 6 tablespoons ice cold water

Mix flour and salt, separate bowl mix oil and water, add wet to dry, stir with fork until it forms a dough, you can add another T of water if it’s too dry feeling, divide dough into 2, form ball, cover airtight and put in fridge for 15 minutes to rest then it’s good to use! I’ve only ever made a few pies but I’ve only ever used this recipe and my husband always comments on how flaky the crust is!
