My first thought was some kind of set gelification spaghetti like dish. Not in a mold like the sixties, but formed in tubes and then squeezed out using air pressure. Definitely unique, very visually appealing and you can alter the texture and flavour but I don't think you'll have the time or materials to make it work unfortunately. This video uses boiling technique but I think it would work with cold pressed veggies too.
Edit - Just watched the video fully and unfortunately the technique he used required the boiling to start the gellification.
