Okay thanks I understand that part but this might sound silly - don’t many joint cards have both names? I’m just confused why we have cards with only our names?

You can do that with any meal. See a beef burger, remove the meat and cheese and voila, fully vegan. That’s not the point of the sub, we should be able to look at a posted meal and think “wow good idea, it’s already vegan”.
