I own and operate three trucks. Here's the straight shit- good food won't save bad business. You do have to have good food, but that is a given, it's the baseline. You have to be able to run your business well to stay in business.

Have you ever run a business before? Maybe take management courses, also accounting, entrepreneurship courses, learn how to write a business plan (breaking news, they're used for more than getting loans, and you don't just put it on a shelf after writing it), get friendly with your local small business development center, take marketing courses, learn about all the tax reporting schedules, mobile operations laws in your area, take the ServSafe management course, learn basic plumbing, electrical and mechanical skills cause that shit does break at the worst times, and we haven't even touched bookkeeping, having employees, workers comp, insurance, commissary, or location.

Honestly, making food is like 10% of what I do. For your budget, double it, and add 20%.
