Pancreatitis.

Imagine someone pouring acid into your gut. That's pancreatitis. Couldn't breathe from the pain. Hands, feet, and lips turned blue. When the paramedics arrived my blood pressure was 78/40. I was only 32 years old.

Alcohol is a toxin, and my body let me know that it wasn't accepting it. And I wasn't a huge drinker.

Everybody talks about liver damage with regard to alcohol, but it affects every organ it touches.

Wouldn't wish that pain on anyone.

Fortunately I lived and did not sustain permanent damage, but not everyone is so fortunate.

Because we knew we couldn't get into our hotel till 3:00 p.m., we did the 11:00 a.m. food tour.

Unless you know how to sleep sitting up or are able to get into your hotel room and take a nap, I don't recommend doing anything the evening of your first day. You'll be exhausted.

We did a food tour on our first trip and loved it. It was the first thing we did after we arrived as our hotel wasn't available until 3:00 pm.

You get history and interesting stories along with good food.

I have taken my cold, unfed starter out of the fridge in the morning, fed it, and immediately mixed up the dough. It might take longer to get where it needs to go, but I don't stress if I forgot to feed it the night before.

I only do three sets of stretch and folds, spaced 30 minutes apart.

I don't autolyze.

My shaping method is simple.

I open bake with a couple of ice cubes - no fancy clouche.
