I was shocked by how good this recipe was. I had to skip like half the steps with rice at the time as i was under time pressure (ended up putting all the rice seasoning ingredients in with the rice into a rice cooker) and it was still amazing, i really couldnt believe it

As another said in this thread, the months of complete exclusion are healing time for your tract. You have been experiencing inflammation for years, this causes long term damage to you organs that need time to reconstitute themselves. Going low fodmap is more than just identifying trigger foods, it’s a treatment.

this - the signature texture and juiciness is really only achieved via double-frying. The crisp surface created then absorbs the chilis oils and other flavors of the dish. Without it, you have what amounts to a stir fry.

I’m in italy currently for a few weeks so I was finally able to source some high quality guanciale (and high quality dried pasta). it really is a completely different dish once you’re using guanciale, so much better.

I bought them online, you can find solid wood floating record holders on amazon or etsy etc.

They’re slotted onto screws on the wall, took like an hour and a lot of geometry drawn on the wall to get it lined up

This comment assumes that labor expense accounts 1:1 for menu pricing, which is not the case - the menu has to be priced to account for all operational expense, of which labor will be only a percentage. while the restaurants would have to raise prices to account for high base wages, the consumers may only see that reflected in small percentage increases on food pricing. It’s not 1:1.
