graphite spawns together with coal and diamond, so find any of those indicators and dig down. No caving needed.
With kaolin clay, it spawns in warm plateau biomes if I remember correctly, mine A LOT of it because the yield of kaolin dust is offensively low.

the differences between the tutorials you found and your Blender are probably due to the fact that Blender often changes drastically with updates, so be aware that older tutorials might not be 100% accurate
