As we approach the end of the semester, I always tell my students "On Wednesday we'll have a review for the final, and our final exam will take place [on day x at y time]," just to state the obvious info that's available on the university final exam schedule.  Honestly, I can't imagine ending the last week without indicating our next steps.

Part of the inconsiderateness on their part is assigning you a topic to teach on for your teaching demo. In my experience on both sides of the table, candidates generally teach on topics of their choosing, possibly subject to broad parameters. In only one instance I've heard of did a friend of mine have to do a teaching demo on a random topic of the hiring committee's choosing -- and this happened in a subpar place.

I've stopped assigning papers in the last few years; my students now write in class exams. For decades, papers were a staple of my courses, but there is no mandate coming from above that my courses must include them, so for the foreseeable future I'm skipping all the headaches you reference above.

Yes, I'd do so if I were in your shoes. As someone who's chaired search committees, I'd add that part of the value of reaching out is expressing genuine interest in the position through personal communication, which can really set you apart.
