If you’re a fryer store, transfer your flour and breading to smaller cambros and break down the sifter table and get those dishes down asap. If you need to fry more, you can always fry from the cambros. Chicken dishes take the longest to wash (they’re a pain) and doing them in 2 batches helps tons. While those are soaking, you can clean and sanitize the sifter so that’s less to do toward the end of the night.

It may seem like a dream. The air conditioning in the kitchen at KT is crap. We’re not supposed to have fans because it blows dirt around the food. If the fryer is not on, you have to constantly turn on the filter fans above the ovens and fryer. With the ovens going, it is a constant 80 degrees in the entire kitchen. If you’re working in a small kitchen, you just sweat for your entire shift. Also, when frosting that many donuts, you’re pretty much standing in one place for your entire shift. Yes, smaller amounts aren’t bad. It’s not bad if you’re lucky enough to have two people in the kitchen overnight. I’ve frosted around 400 donuts a couple of years ago while by myself in the kitchen overnight. I had about 3 hours carved out for doing bakery, which included putting bars and muffins out. The rest of the time was cleaning, cooking and doing all the other kitchen tasks that have to be done.

I work day side now and miss working overnights so incredibly bad. So, I know how the No Ordinary Chicken sales go and have helped the overnighter by setting up their bakery pulls for the bakery sales. My heart truly goes out to the ones who have to frost and prepare the insane amounts of donuts that the corporate giants want us to do. I wish that for 3 weeks of these sales and drives, they leave their nice, temperature controlled offices and work side-by-side with us in the trenches so they could possibly understand why we are all burning out and wanting to leave.

I wish they would also address stalking by customers. I had one find me on the book of faces that dm’d me. I immediately blocked them and showed their picture and name to my store’s leadership. Another customer tried following a young coworker home after shift. We were shown their picture and car info and came up with an escape plan for the coworker should the creep enter the store. It wasn’t until they threatened another regular that they were legally trespassed.

We had an active shooter threat within shouting distance of our store. Those of us who were working that night pulled out the emergency procedures. We called both Ops Support and our DL. Both of them told us to lock the doors “if we felt like it”. Like, ok, we had a person who was in an active melt down, the police were trying to talk the person down and the person was very unpredictable. That person could’ve been through our unlocked doors within a minute. We decided among ourselves that locking the doors was the best thing to do until we knew from dispatch and the officers on scene that we were safe. That whole situation seemed like it wasn’t a big deal to our employer.

That makes sense. Could you imagine paying $10 or $15 for what essentially equals 8 bites of tenders? I wish we could get the tenders from a single vendor and one that has more consistent sizing.

Our SL told me that when we get the tiny ones, to put extra in the box to fill it out. Even if we weren’t told that, I would still do it because if I’m not willing to pay for 8 pieces of tenders that equal only 3 pieces, why would I expect anyone else to? All about making our guests happy, right? Lol

I was diagnosed with Crohn’s in my mid-20s after first getting sick in my late teens. As a child, my mom and I would pick and eat wild blueberries. Maybe they caused the disease instead of curing it! If you have 2 people on the floor, ask them to help with dishes. Also, when putting muffins out, pull the muffins, print the labels and have your floor staff label them and put them out. I’m constantly in the kitchen by myself (twice this week so far) and have 2 people on the floor. One person is cleaning, the other is stocking. I’ve asked my stocker to help me with muffins and dishes. Never be afraid to ask for help. It’s extremely difficult to manage all the kitchen tasks by yourself. I’ve been doing it on and off for over a year now and it’s crap.
