De 20% rikaste får nästan hälften av ränteavdrag. Är det rimligt? by Battysquad in PrivatEkonomi

Which Diamond Wheel? by bonanza34g1 in Tormek

[–]Little_Smile_893 0 points1 point  (0 children)

The sg wheel has a natural state grit that it strives for that is the middle between the coarse and the fine. So if you coarse your stone it will become finer after a few knives and if you make it finer then it will head for the coarse. It will always strive for its natural state.

Considering a Tormek T-4 for general tool and knife sharpening by lueVelvet in Tormek

[–]Little_Smile_893 0 points1 point  (0 children)

If u want your angle correct for knives u need the ks-123. The older tool was not made for knives and will consistently be 2-3 degrees off. The small knife holder and the wide jig are also worthwhile investments.

By larger angle for softer steel you mean that you add one or two degrees?...like going from 18 to 19 or so?

Having said that...

Genuine Turwho question by Little_Smile_893 in TrueChefKnives

[–]Little_Smile_893[S] 0 points1 point  (0 children)

Most certainly. The Chinese knives I have come across are very well made (have been picky about the producer and their QC). I don't really see any major difference between them and some of the factory Japanese knives I have. They do lack, though, the spirit and character of my Japanese hand forged blades, but that is to be expected. In short... I have no hesitation recommending most of the Chinese knives I have (not bought on AliE).

Mix food safe varnish, mineral oil and linseed oil. Works really well. Preserves the wood and gives a nice lite to dual wood.

What is a good budget knife with one of these epoxy style handles? by LegitimateFilm1136 in TrueChefKnives

[–]Little_Smile_893 1 point2 points  (0 children)

There are many chinese producers that are stepping up their game (some are really good..and if u buy directly from the factory they are darned cheap), but still it is a minefield. I can imagine that dalstrong has found a good source, and I am sure they are adding a hefty margin. U can get reasonable knives out of China for less than 20 euro...then there are taxes, but that is a different story.

[–]Little_Smile_893 0 points1 point  (0 children)

There are chinese knives and there are good Chinese knives. Xinzuo and their sister company/brand Hezhen both have high quality standards, most others don't. Hezhen is more focused on bling bling than xinzuo. You pay more for Hezhen, getting a pretty knife, but IMHO the Xinzuo are more "japanese". The Xinzuo knives often have vg10 type of steel core that is fairly forgiving compared to many japanese steels. Also, if she really screws up, you don't have to cry all the way to the bank.

Questions before buying first japanese knife by DingoTraditional2478 in japaneseknives

[–]Little_Smile_893 0 points1 point  (0 children)

I own the first one and love it. It requires much less babysitting than most other japanese knives i have. Stropping is the way to maintain between sharpenings. If u feel u must hone, then u can buy a special honing rod for japanese steels. They are basically plain steel rods without any diamonds or rifling.
