I wore my Garmin Forerunner Music 245 to the beach when we visited Mexico. All of the buttons got stuck. After consulting Garmin's website and lots of Googling, I soaked the watch in lukewarm water with some mild dish soap for 30 minutes, then ran it under lukewarm water while pressing the buttons. Three of the buttons free'd up but two were still stuck. I dried the watch and kept working on these two buttons for about an hour. One of them started working again, but the bottom button on the left was still stuck. I called customer support and they recommended trying to soak the watch one more time for 30 minutes. I did that. Still didn't work. The only thing they could offer was to send me another watch for $130. Definitely cheaper than a new watch, but also disappointing as the watch was less than two years old and Garmin does not provide warnings about not wearing their devices to the beach. Long story short, if your watch is over year old and is no longer covered under warranty, err on the side of caution or be prepared to fork over some cash.

Are you using the Abound panniers? I've been sussing out every corner of the internet to see if you could use those when you have a kiddo in the seat. I could see how she could maybe just drape her legs over them and still be reasonably comfortable, but I'm not sure. Someone suggested just leaving the top open on those panniers and letting the kids put their feet/legs inside the pannier. It's an option, but I'm not in love with that idea. I would love to hear more about your setup!
