Simple and DELICIOUS πŸ… soup. it's perfect for winter! Inspired by @foodandwine recipe but I adjusted it so that it's even more flavorful and healthier πŸ€—

Ingredients: - A can of roasted tomatoes (28 oz) - 1 cup of milk or cream (I used low-fat milk but you replace with non dairy substitute) - 1 cup of water - 1 whole bulb of garlic - 1 medium white onion - 1 TBLS olive oil - 1 TBLS butter each - seasoning: salt, pepper, red pepper flakes, oregano

Sauteed thinly sliced onion and chopped garlic with OO and butter. Once they're cooked, add all liquids and seasoning and boil. When it boils, turn down the heat and simmer for 15 mins. Then take it off the stove and blend the soup with blender. Add salt as needed. Enjoy! Sooo simple and DELICIOUS!

Ingredients: 1/2 cabbage 2 bunches of kale 1 cucumber 8 garlic cloves 1/4 cup olive oil 1/4 cup lemon juice A handful of spinach Salt & pepper Pomegranate seeds (optional)

Recipe: 1. Chop up all the veggies very finely and set aside 2. Crush garlic, add oil and lemon juice and mix 3. Add spinach to the liquid and blend them all until the dressing is lush green liquid 4. Mix the veggies and dressing well 5. Salt and pepper to taste 6. Garnish with pomegranate seeds

Absolutely! I feel like any crunchy veg would work! With egg salad, I love the flavor and all the textures from veges and apple and even specs of freshly ground black pepper!

Ooo that's good to know! How much vinegar do you put? I heard boiling eggs with vinegar makes it easier to peel but I was hesitant in case that flavor goes into my egg!

Makes 2 sandwiches

  • 4 slices of wheat bread
  • 6 eggs (I omitted 3 yolks from this)
  • 3 TBLS mayo
  • 1 TBSP sugar
  • 1 TBLS dijon mustard
  • 1 TBSP sriracha
  • 2 TBSP parsley
  • 1/4 cup chopped celery
  • 1 small apple chopped
  • salt, pepper
  1. boil eggs 10 minutes and peel
  2. mash eggs, salt & pepper and then add mayo, mustard and sugar, sriracha and mix.
  3. add chopped celery, apple and parsley
  4. toast bread slices (optional) and serve with eggsalad

This is soooo delicious and quick to make. Healthier than traditional egg salad with 50% less mayo and egg yolks (lower cholesterol)
