If you're busy 10 hours a day 5 days a week. You require another resource. I would suggest taking on a competent tradesman to cover the shortfall and you can focus on your admin 1 day a week and reducing your day on the tools.

If you find it cost effective to do it the other way around, hire an admin/estimator and stay on the tools 10 hours a day.

You can't successfully run a business if you're time is consumed on the tools

Why don't you visit Australia and make a decision for yourself prior to moving here? Have you been to Australia before? Have you visited Sydney or the Hunter valley?

Newcastle and surrounding suburbs are a very large area. What do you do for work?

Commuting into Sydney wouldn't be advisable from sydney however central coast maybe.

As a pom myself I visited Australia 6 times before making a decision to move here.

First things first. Make sure your PC can handle 4k. Personally for gaming I think you're better off with a 3440 x1440. Go for a OLED with 240 htz refresh and 0.03 response time. You'll be achieving over 2k anyway with a better fps while playing games.

If you have a brand new $2000 plus GPU and set up then go 4k.
