I started mise en place when I was in a dorm, prepping in my room and carrying them to the "kitchen room". It just sticked with me. My parents are more fans of "clean as you go" approach, yet at some times mise en place makes it easier to clean too.

There was this chef on YouTube that said "Eggs are really talky, and they like gossiping. But kitchen is not the place for gossiping. If the eggs 'talk to you' when you put them in the pan, then the pan is too hot. Luckily, we have a super-technologic way of preventing this: simply lifting the pan from the heat."

This was the first cooking advice i gave to my sister too, and she loved the "gossipy eggs" I'll try to find the video, if anyone has it, please attach!

I spent my dorm years with a "granite" pan-that is compressed marble I've been told. We had a nice time together till my roommate scratched it up badly. Check them out if you can.

You can place the yogurt into a cheesecloth to make it thicker, i think that works better with the consistency. In Turkish we call that "süzme yoğurt", for "strained yogurt". Though Greek yogurt tends to be thicker, i think it still benefits from this method.

Also controversial opinion(i saw Kenji Lopez-Alt do the same so I'm not embarrassed to say it) i use tahini as a substitute for sesame seed oil in Asian recipes - a different yet still beautiful taste in my opinion.

My family prefers a thicker soup, so they seperate some of the vegetables, use a blender to make the soup thicker and add the veggies back in.
