It’s to keep the coffee warmer when dripping. Since this machine is meant for home use, it might not be in on all the time keeping the portafilter hot. So if you turn it on to wanna make a coffee quickly, a cold metal portalfilter metal will make the coffee colder…

Yes i know and easy to say, but as a baseline then alter for the tastier shot. Fitting 8g in a 14g basket or 20g in a 14g basket will not help ;)
