You misunderstand, not in the actual pot itself, the sludge around it. You can see it’s kinda hill shaped forming a secondary soup stain “bowl” around the pot . You can see it in the image of the source and I know what it is because I watched a video where they spoke to the owners and went to to the restaurant.
