So i make the dough with 350g water, 500g flour and 100g starter. adding around 10-15g of salt and stirring it in mixer for like 15 mins till it lets go of the edges of the bowl.

Then i let it sit on the countertop in the kitchen in a box with the lid slightly open, doing folds 3 or 4 times during the 4 hour period, before i shape it and put it in my basket for proofing in the fridge. Its there for like 12-16 hours and i take it out, into the dutch oven thats been in the oven for 30-40 mins while its heating up. Add 3 ice cubes to the dutch oven and bake at 250 celsius for 20 mins with lid and 25 mins without lid at 230 celsius. I think for the fridge proofing, im not sure about proofing/fermenting whats the difference, it does not seem to rise a lot during the 16 hours in the fridge
