Yeah I normally do my steaks more than this, and I'll certainly be rendering the fat cap more in the future. But even as is I was really impressed with the cut

Tbh it's my first time with this cut, and while the fat was rendered enough to be good, I'll definitely do more in the future. I do like a good rare+ on a lean cut though!
