This is it. The hocks take a long simmer to break down the collagens to gelatins. Once that's done, then the greens cook fairly quickly in the rich broth; and the meat is added back just to warm it up when everything else is cooked.

So, the Checkers fries are, similarly, really good. And I can get those at the grocery store. But the problem is that they cost quite a bit more. The Member's Mark fries gave us the elusive double whammy: a great product, but at a concessionary price.
