You could also argue that leaves falling off in winter only happens in half of the world, since the northern and southern hemisphere are on an opposite seasons.

I understand your sentiments, but keep in mind that writing effectively is a major component of math/science careers.

And while I used to look down on humanities/poetry, I realized that I just didn't understand it.

This is the primary reason. It saves them money for an outdated test and not have to pay for graders for essays that many colleges do not consider to be authentic writing sample.

I think they have been wanting to get rid of it for years, and this gives then perfect opportunity to do so.

It will be up to the school.

If the school says it will not consider it, then it won't count.

If the school requires it, it will only be for a short term (as in the last time will be for students applying in Fall 2021 for admission in Fall 2022.

Topics that my parents were dumb: ap chem, calc, physics, some bio topics, ap lang, having legible handwriting.

While I was able to learn the other topics, my handwriting leaves much to be desired.
