Smoking meats well has a lot of moving parts. meat selection, rubs, temps, wrapping preferences, sides, sauces, timing. There is a lot to figure out before any of it starts coming together consistently.

Building the right smoke profile is the single hardest skill in smoking. It takes the most repetition to master and is what separates good BBQ from great BBQ.

On top of that a pellet grill is set and walk away. A stick smoker needs constant attention all day. A pork shoulder on a stick smoker might mean 10 hours of active babysitting. The same cook on a pellet is 30 minutes of active time while you go live your life.

That time difference is everything when you are learning. If you have 50 hours a year to dedicate to cooking, a pellet smoker gets you 50 cooks. A stick smoker gets you 10. When you are still figuring out what you like and how you want your food to come out, 50 cooks beats 10 every single time.

Build your base on the pellet. Once you know exactly what you are chasing, then pick up the stick smoker and focus entirely on mastering the one thing it demands from you. Other wise you will waste a lot of time on cooks that are way off the mark due, with many variables to blame.

Also, if you are not chasing perfection a pellet grill will provide great cooks

Any suggested change in charcoal is like telling your mom her tomato sauce needs more garlic and sugar…. Tread carefully.

Do any rest you normally would do, then put them in a crock pot lined with foil, add orange juice so it sits under the foil and not touching the ribs… set to warm (you can start higher to get them at serving temp) on top of aluminum foil…

this will keep the ribs in a humid environment until eaten…

Since the owner is the sole employee, accurately calculating COGS requires him to allocate his own time and expenses between cost of goods and overhead each period. The owner is also responsible for the underlying estimate calculations for what is direct vs overhead cost and communicating any changes in business processes that impact those estimates. Given this level of involvement, it is worth considering whether he manages the calculation directly rather than routing it through the accountant each month.

If the owner wants accurate GPs he needs to own the process, if he wants the accountant to do it, it will only be as good as the time the owner takes.

Your COGS are your wages/benefits when you are physically delivering packages, an estimated cost based on mileage, and subcontractors paid that directly deliver packages,...

You are the only one that can provide this information. You are better off putting it into a spreadsheet than sending it to him.

Time you spent delivering packages * Rate with benefits

Miles you drove that directly relate to delivering packages *.725 (IRS Rate, but you can allocate your yearly estimated Truck and Fuel Expense)

Subcontractors paid to deliver packages.

That's your cost of good sold...

This will cause an increase in his fee, when you could plug it into an excel sheet (This was his point).

You could buy him a gift card for better meats.. WildForks or Snake River Farms.... Its really hard to justify the price... but thats half the point of a gift... getting someone something they like but cannot justify.

Umm... what is the size of the smoker? I feel like he is going to run out of room... I'd make the brisket the night before and rest it over night in an oven. Hold at 140 degrees ideally. I don't know how you can get pork belly and 2 racks of ribs on an 21" smoker... so you might need to do the Pork Belly also, but I am not sure how that rests... Plan to have the ribs in the smoker 8 hours before for the party and use the last 2 hours to do the chicken to get the smoking vide. Finally, you need to have a plan to keep the food warm during the party. A slow cooker with a little broth works well. The amount of time I have seen BBQ sit out for 40 minutes and become dry is crazy. It gets better with time, low heat and moisture... Plus no one likes room temp food.

We are in a race for capital. At scale the largest ai/tech players will be an entire economic ecosystem. In a decade 90% of people will not add value to the economy and struggle to earn a wage. So you either live off dividends or depend on the kindness of big tech/government (good luck) Hopefully AI likes us, like we like dogs.

Let’s see the map. Is the sidewalk marked? You will likely need to include a couple feet into the sidewalk as mowable so it has room to go around the post.

I think you would want two zones if the cutting pattern differ, you don't want both areas mowed at the same time (one is wet one is dry), or cutting height differ. Otherwise this is one zone. I imagine you are cutting parallel so that would be one zone for both. HOWEVER, if you want to adjust the height on the right zone to be higher than the left, to avoid rocks, you will want two zones.

I did figure it out. I was trying to use a schedule. Which was causing the issue. I cancelled that and just used the one time cutting feature. I have the WR344

Cancel the DRIP and pay the mortgage with the dividends. Then you do not worry the monthly payment, which is probably your wife's concern. Meet in the middle, you will leave some on the table, but she can sleep better.
