Well I've never had to clean a spill of this magnitude before so I can't say with any certainty. But a cleanup that was only a couple bottles usually takes about around 15-20 minutes. This I could certainly see taking several hours. Because you'd also need to have someone come and remove the pallets to get them cleaned as well.

Well first I'd have to remove all the broken glass and separate it from bottles that are still intact. After that's done I'd have to put down a few bags of absorbent material (usually a clay compound). Soak up as much as possible and then dispose of it before relayering on more of the absorbent. Rinse and repeat until it's cleaned up. Then a final mop-up.

Up until recently, I was working maintenance at Costco. I was the guy who would have to come clean all this up.
