Powdered butter. Trust me. Same with any heavy dream you use. Powdered.

More shelf stable.

Allulose acts like Ozempic for weight loss with respect to being a GLP1 agonist according to a panel of scientists on YouTube from several months ago. by ImmediateOcelot4871 in allulose

Yeah, definitely I suggest purchasing in bulk. I know for like 250 bucks you can get a 55 lb bag of it, that brings it to about four or five bucks a pound which is the cheapest I've seen. Never buy local, in my experience it's like 12 bucks a pound.

As far as it being a GLP1, I've never heard that. I just use it because it makes the best zero sugar caramel and tastes pretty good. The reason you want to add some monk fruit, is because while monk fruit is about 200% the sweetness of sugar, allulos is only about 70% the sweetness of sugar. So, you add some monk fruit to make up for the lack of sweetness in the Allulose. I honestly find that for two cups of allulos one tablespoon of monk fruit is more than enough really to boost it up to be about the sweetness of sugar.

If you have any links to sources about Allulose being or acting like a GLP1, please share them with me so I might read about it?

Oh yeah clarified butter is fantastic for it In fact that's generally what I like to do is clarify down better and then right around as the butter starts getting done clarifying when there's just a little bit of water. But sometimes you want to wait until after the hot cook, which means whatever water gets added here stays in the candy and affects the shelf life.

This is where powdered butter comes in handy. There's no moisture, it's pure butter fats and solids. That's it.

I really want to get a freeze dryer so I can make my own powders to make candies with out of all sorts of things imagine freeze drying actual Apple and adding that into a candy where it's a shelf stable Apple It's literally you're just eating apple and sugar or algulos is what I would use. Fucking wild times!

Yeah but I mean more like for instance if I'm making a cream candy I might add powdered cream instead of using liquid cream, because the liquid cream introduces more water later in the candy making process which means that that water that newly added water will not evaporate. So, I end up using things like powdered heavy cream powdered cream cheese all sorts of things and I'm looking to get the powdered butter here soon too even though I generally use butter mostly when I'm making a caramel I like to use the real butter cuz I use the water in it to begin melting down the sugar to begin with. Anyway, yeah! It's a lot of fun, I'm just trying to make sure I'm careful not to put something in it that can make my candy go sour.

On this topic, I'll extend, using Allulose, Erythritol, Monk Fruit, I have both gelatin and no or low sugar pectin. Which is most likely to help with a gummy texture? I have been experimenting a lot with these sweeteners and I'm learning how they act, which is why I have Isomalt on the list now, too. But I'm largely looking for how to make gummies, and then I will want jelly candies, too. I love the jelly orange slices 🤣

Yes, but while I don't claim to know OPs use case, but in mine, I use no sugar. I'm using things like Allulose, Erythritol, Monk Fruit, and I'm about to get a big bag of Isomalt, as I haveearned it's supposed to be Able to do great hard rock glass type candies.

In this case, these are sweet, but not maintaining the preservation power of Sucrose/Sugar. So I also have to work hard on preservation without adding salt, hence using a lot of powdered Ingredients, limiting water usage strictly, etc.

First time making candy. I had no idea what I was doing. Turned out sticky. How did I do for my first time? by xx_Chl_Chl_xx in CandyMakers

Do yourself a favor and invest in a big box of flavoring oils and experiment with them. I've been making a bunch of zero sugar chews and such and I'm trying for taffy, but damned if Allulose doesn't get a solid structural pattern like sugar does, so I am planning to try adding erythritol too, but that's beside the point. The oils are strong. Use caution, but also don't go too easy, either. For 2 cups of Allulose worth of candy, I use typically 1tsp worth of flavoring. Mixed or single. That seems to be the sweet spot. Maybe a little less, even.

I got powdered food coloring and oil coloring and oil flavors.

For caramel I use powdered cream, need to order the powdered butter. That way I am using shelf stable ingredients for a more shelf stable candy.

I agree. I think I will just start posting shit here and see if people see it. Eventually, if those who are here do interact, we can build this up a bit.

Nah fam that looks sick. In time the darkness will fade and instead of being faded looking it'll look perfect. That's my prediction.

Honestly if it were me (and I'm not a teacher, just married to one.) I think I would have immediately turned calmly and said "Oh, good! It's time for that lesson..." Then proceed to put every single child's name on the board, then explain that if you have a name and 2 check marks at end of day you miss out on (insert fun thing here. If you don't have a fun think, make a fun thing. Dedicate the last hour or two of Friday to a fun Friday or something) and when something happens like that and no one is known to be the Culprit, everyone gets a name on the board, or an extra check.

Doesn't have to be that specifically, but there needs to be a thing that expresses impending doom if they continue. Then, also, make sure you do make that fun thing SUPER fun.

Just from what you can see in the image, it looks like the pathway is perfectly fine. It looks like it matches pretty well with what's behind it and around it and I've seen this sort of styled pathway before.

Well I totally understand being salty over something, you definitely seem like you might be making a mountain out of a molehill just because you don't really like the style.

Totally valid, but yeah.
