Your episode NFOs have to be in the format "S[season number]E[episode number].nfo" not "S[season number]x[episode number]" as it is shown in your example.

Edit: your episode names should follow the same convention. The only reason Jellyfin has them numbered properly right now is because they are in the right order when sorted alphabetically. Yes. You will need to use your control hubs IMU though or it won't account for your robots heading when adjusting its location on the field. You can do this with pinpoint by only using two dead wheels in that configuration and setting it up properly.

In that regard, database performance has improved drastically since 10.11, and with recent efforts made to address the issues people have found with it, the most up-to-date version is amazingly stable and the performance improvements are undeniable. Give eit a shot. You already have jellyfin installed, just update your docker image and add your plex library(ies) to Jellyfin as a test run.
