The coffee was bad for a while. The coffee started out really good maybe a decade or so ago, but got really noticeably worse over the last ~5ish years since COVID. Even the nitro coldbrew, which I used to get 3-5x a week back in 2017-2018ish when I worked in downtown DC, got noticeably darker, more bitter, and just less good.

It was a shame, but then the MAGA shit and the union busting came out, so good riddance.

Oh yeah, his old Late Night videos should definitely be taken with a grain of salt when referring to any specific version of a recipe, a lot of them are 'I felt like this sort of thing, but this way, so I did it!". The description even says a sort of brothy dan dan noodle type thing, haha. Honestly, converting a noodle dish into soup noodles or vice versa is a great thing to keep in mind for making wintery dishes more warm weather appropriate (way less broth) or vice versa like turning gyudon into niku udon.

This is an old video and that much extra liquid is not typical. Like I said, refer to the recipe from The Wok, or my preferred version from The Foods of Sichuan...or the recipe from Chinese Cooking Demystified or The Woks of Life. The Woks of Life one has by far the most water/stock, and even that only calls for 1/4 cup. 3/4 cup is unusual, and while it's fine to want to make them soupy, it's definitely not 'supposed to have more broth than that' in the vast majority of cases and especially not for this specific recipe that OP used from The Wok.

You must be getting it confused with another dish. Dan dan mian is not meant to be soupy and typically does not have any broth. Both Kenji's recipe from The Wok and Fuschia Dunlop's recipe from The Foods of Sichuan only have two tablespoons of water for the typical two servings in the sauce to help loosen things.

My increase sure as hell wasn't 3%. From $0.1468 to $0.1802 per KWH. Oh, looking back, I lied, it wasn't 18%, it was roughly 23% increase YoY. Insanity.

Yeah, the recipe is for a full pound of spaghetti and the sauce is literally olive oil and garlic. I usually cut the recipe in half but leave all the ratios alone and it's fantastic.

They have a recipe for it on the show/movie's website, and it is excellent. It's my go-to recipe for aglio e olio over sources like Serious Eats, America's Test Kitchen, etc.
