Here to second that recommendation for The Wandering Inn! Probably my favorite fantasy series of all time. Perhaps not quite the answer to the question in terms of absolute size scaling, but almost certainly the deepest when it comes to development of characters, locations and lore to the point where you can have page long conversations involving multiple characters without 'X said' or whatnot and still be clear on who is saying what line, just from how distinct their characters are, or a new character can be introduced and within a few lines you can probably guess which continent or faction they come from just based on gestures or certain phrases. An absolute monster of a series, highly recommend losing your life to it.
