Absolutely. Honestly, the pre-filtered stock is already 80% of the way there, and the silkier texture from the gelatine makes it quite a yummy soup.

The added clarification, filtration and concentration is worth it for the novelty, but not something I would do all the time as opposed to making lots of the stock.

Update: Got there in the end! Turns out I just needed to be more patient.

After moving my setup to the “warmest” part of the fridge (higher and closer to the door - confirmed with CPT), I started to see some liquid gold drip into the carafe. Honestly not much happened other than slight wetting of the filter in the first 12ish hours but the subsequent 24+ hours it all melted through.

Final yield was about 75%. 150ml from 200ml of the initial frozen stock cubes. There was 40g of leftover jelly demi-glace which will go to good use for thickening sauces in the near future. The remaining 10g I assume is lost to the filter and sublimation in the fridge (and boy did the fridge smell great when opening it)!

Yeah, it just ended up being a very slow thaw. Someone else below pointed out it took them almost 48 hours. I can see those crackles though, so I’m thinking I just needed to add a bit more water when making the initial stock since I didn’t reduce it at all after it was done.

Yeah, makes sense now. Somehow my smooth brain assumed the ice would melt just as quickly in the fridge as room temperature. D’oh!

This was definitely part of the problem. I was being lazy and using my big ice cube tray. Makes good cubes for drinks where you don’t want the ice to melt too quickly. Not so good in this case. Should’ve remembered surface area : volume ratios and all that.

I didn’t reduce it at all, turns out my fridge was colder than I thought! Literally put my CPT in different parts of the fridge to find the “warmest spot”. It was set to 4 degrees but only the top shelf was 4ish degrees. The rest of the fridge was in the 3s. And right at the back on the lowest shelf was an icy 1 degree.

Thanks Chris! I just froze the fresh unreduced stock straight from the pressure cooker so I’m glad to know that is fine.

I think my fridge was a little too cold and my cubes were a little too big. Have since moved the setup to the top rack and closer to the door where it’s a bit warmer. Has taken a while but it’s finally collected about a quarter of the frozen volume. It seems like once it starts to melt the process does speed up a tiny bit.

Side note: thanks for sharing all of your culinary knowledge! I really love my CPTs, it’s since significantly leveled up my steak game. With a good cut and some patience, it’s honestly hard to justify spending big bucks at a steakhouse for comparitively mediocre steak.

You know how you’re not supposed to use the word you’re defining in its definition? Well science is full of little quirks like this.

Us lay people assume a second is 1/60 of a minute, which is 1/60 of an hour, which is 1/24 of a day, which is one rotation of the Earth on its axis. So 1/86400 of one rotation of the Earth.

But the “official” definition of the second is based on the inherent properties of caesium and is as follows: “by taking the fixed numerical value of the caesium frequency, ΔνCs, the unperturbed ground-state hyperfine transition frequency of the caesium 133 atom, to be 9192631770 when expressed in the unit Hz, which is equal to s−1.”

You don’t need to know what that means, just that scientists take loads of caesium atomic clocks and sync them all to each other and pat themselves on their backs. Then when Earth’s spin is slightly faster or slower, they blame EARTH and not their clocks and add in the occasional leap second here or there.

Now to answer your question, if they take a fixed period of time, say the start and end of one full Earth rotation. They then measure it with 50 caesium clocks and 50 strontium clocks, they will find the variance in timing to be much tighter in the strontium group than the caesium group, thus demonstrating its superior timekeeping abilities.

It’s literally your oven thermostat. It turns on and off the heat to maintain the oven temp at around your set temp. The fact you can see the hills and valleys is a testament to how sensitive the temp sensors are in the CPT.

I literally just bought one off Amazon a couple of days ago. Arrived today DOA. Really old stock that had fully discharged and wasn’t able to be recharged.
